These Chocolate Banana Nut Muffins are an easy and healthy(ish) dessert (or even breakfast!) made from whole wheat flour and coconut oil. They really hit that sweet spot and are the perfect snack for on the go families.

1 1/2cupwhole wheat flour
1 tsp.baking soda
1 cupchopped pecans
1/2cupmelted peanut butter
1cupdark chocolate chips
Preheat oven to 350 degrees. Prepare a muffin tin with muffin liners, or kitchen spray.
In a large bowl, mash bananas until only small chunks remain. Add in melted coconut oil, eggs, vanilla extract, and melted peanut butter. Stir until combined.
In a separate bowl, combine flour, baking soda, baking powder, sugar, salt and stir to combine.
Combine wet & dry mixture until JUST combined. Fold in chocolate chips and pecans. Divide batter evenly into prepared muffin tins.
Place in oven and bake for approximately 25 minutes, or until toothpick comes out clean. Tops should be golden brown. Remove from oven and place on cooling rack for at least 5 minutes. Serve warm or room temp!
